We know it as stuffed eggplant. But, ‘little shoes’ describes it so much more flamboyantly! The Greeks do have a way with words. It is that divine combination of half an eggplant (aubergine), perfectly seasoned meat (of your choosing), covered with a thick layer of ever-so-creamy bechamel sauce and baked to perfection. Pearsa’s mom Irenei – made the best I have ever had!
